Spinach celery rolls


Ingredients:


- Fresh spinach leaves
- 1/2 medium finely grated celery root
- Curry butternut mayonnaise  or the vegan mayonnaise of your choice
- 1 cup of finely chopped mushrooms
- 1 cup finely chopped parsley
Mix these ingredients (except the spinach leaves).
Fill in the spinach leaf with 1 tsp or 1 tablespoon of the resulting mixture (depending on the leaf size).
Make the rolls and place them on a plate.
If the spinach leaf is wide enough, you can close the sides of the rolls by pushing the extremities of the leaf towards the inside with the index finger, while holding the roll in the other hand.
The spinach leaves can be replaced with young green cabbage leaves.
